  • Olives brought to the plant for oil production at harvest time are stored in the special section.
  • In the upper part of the bunker there is a screen for holding large pieces of coarse.
  • Olives passing through the sieve pass through the bunker and then through elevator conveyor into the leaf separation and washing units.
  • Here olives leaf, powder, soil etc. washed away from undesired parts. The olives from the washing section are taken to the crusher with the help of a spiral and will be passed to the malaxer after being treated in the crusher.
  • Doughing process is done in malaxer. Olives are mixed with water in the malaxer and then passed to the decanter (centrifuge).
  • Then olive pomace is separated from core in the core sorting machine.
  • The slurry passing into the separator will be separated from each other as olive oil and blackwater.
  • At the end of olive oil production, three materials are separated from the decanter. These include: pomace, olive oil and extravergine.
